The region that encompasses Central Texas’ barbecue belt, a beautiful area consisting of rolling landscapes, cotton fields, corner markets, and bluebonnet flowers, is affectionately known by Texans as Hill Country.  Lying just outside the Hill Country is the town of Lockhart, the official barbecue capital of the Lone Star State.  Hill Country Barbecue Market pays homage to the legendary meat markets-turned-barbecue joints of Central Texas that rose to prominence beginning at the start of the last century.  

Our fabled brisket is smoked over 100% post oak wood shipped to us directly from Texas.  We source our sausage from Kreuz Market, arguably the granddaddy of all Texas barbecue joints.  Our meats are smoked low-and-slow using time honored traditions and simple seasonings like coarse black pepper, kosher salt, and a pinch of cayenne to let the flavor of the barbecue shine through.  Guests can enjoy our delectable ‘cue by the pound, as a platter, or in one of our signature sandwiches.
